Ingredients
½poundsmoked chicken breastthinly sliced
1avocadolarge - sliced
6slicesbreadyour favorite
1cupshredded cheesecheddar, Monterey Jack, or a blend
4tablespoonsbutter
Chipotle Sauce
½cupmayonnaise
2tablespoonsadobo sauce from canned chipotle peppers in adobo
1clovegarlicminced
1tablespoonlime juice
salt and black pepperto taste
Instructions
Make the sauce
In a small bowl, whisk together the mayonnaise, adobo sauce, minced garlic, lime juice, salt, and black pepper. Adjust the seasoning to taste. Set aside.
Sandwich
Preheat the griddle or skillet over medium heat.
Spread a generous amount of the prepared chipotle sauce on each bread slice.
Add a layer of cheese. Arrange the chicken over the cheese and add the avocado. Finish with another sprinkle of cheese before adding the top piece of bread.
Add a small pat of butter to the preheated skillet and allow it to melt.
Place one sandwich on the griddle with the melted butter. Repeat with each of the sandwiches. Allow the sandwiches to grill in the pan for about 2-3 minutes or until golden. Lift the sandwich and add another pat of butter. Flip the sandwich and place on top of the melted butter.
If needed to help the cheese melt, add a piece of aluminum foil over the sandwiches as they cook.
When the sandwiches are golden on both sides, remove the sandwiches from the skillet and serve warm.
