Ingredients

  • 8 chicken thighs - bone-in, skin-on
  • 2 cups barbecue sauce
  • ¼ cup olive oil
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

    Instructions

    • Preheat the oven to 400°F (200°C).
    • Mix the barbecue sauce, olive oil, smoked paprika, garlic powder, and onion powder in a small bowl. Season with salt and black pepper to taste.
    • Pat the chicken thighs dry with paper towels, place them in a resealable plastic bag or a shallow dish, and pour about HALF of the barbecue sauce mixture over them. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, allowing the flavors to soak in.
    • Line a baking sheet with foil for easy cleanup. Place a wire rack on the baking sheet. Arrange the marinated chicken thighs on the rack, skin side up. Brush a little of the leftover marinade over the top of each thigh. DISCARD the bag with the marinade.
    • Roast the chicken thighs in the preheated oven for 35-40 minutes or until the internal temperature reaches 165°F (74°C). Baste with more barbecue sauce halfway through the cooking time for extra flavor and juiciness. (Be sure to use fresh BBQ sauce from the bottle - not the contaminated marinade from the raw chicken.)
    • Remove the chicken thighs from the oven and let them rest for a few minutes.
    • Garnish with chopped fresh parsley and serve hot with your favorite side dishes.
