1poundbacon - sliced - diced
1medium onionchopped
6large eggs
4cupshash brown potatoesfrozen, shredded, thawed
2cupscheddar cheeseshredded
1 ¼cupsSwiss cheeseshredded

Instructions
Preheat the oven to 350 degrees. Prepare one 9x13 casserole dish with nonstick cooking spray.
In a large (12-inch) skillet over medium-high heat, cook the bacon with the onion until the bacon is crispy. Drain well.
In a large mixing bowl, beat the eggs well. Stir in the bacon and onions (reserving a small amount for topping), hash browns, half of each type of shredded cheese, and cottage cheese.
Spread the mixture evenly in the prepared casserole dish.
Top with the remaining cheese and then the reserved bacon and onions.
Bake for 35 to 40 minutes or until the eggs are completely set.
