Ingredients

  • 1 pound bacon - sliced - diced
  • 1 medium onion chopped
  • 6 large eggs
  • 4 cups hash brown potatoes frozen, shredded, thawed
  • 2 cups cheddar cheese shredded
  • 1 ¼ cups Swiss cheese shredded
  • 1 ½ cups cottage cheese small curd

Instructions

  • Preheat the oven to 350 degrees. Prepare one 9x13 casserole dish with nonstick cooking spray.
  • In a large (12-inch) skillet over medium-high heat, cook the bacon with the onion until the bacon is crispy. Drain well.
  • In a large mixing bowl, beat the eggs well. Stir in the bacon and onions (reserving a small amount for topping), hash browns, half of each type of shredded cheese, and cottage cheese.
  • Spread the mixture evenly in the prepared casserole dish.
  • Top with the remaining cheese and then the reserved bacon and onions.
  • Bake for 35 to 40 minutes or until the eggs are completely set.
