Ingredients
5poundschicken - 1- whole - roasting
1bulbgarlicsliced in half
1lemoncut into wedges
¼cupgheeclarified butter, melted
1½teaspoonssalt
1teaspoonblack pepper
1½teaspoonspaprika
1½teaspoonsground cumin
1teaspoonturmeric powder
2tablespoonslemon juice - fresh
Fresh cilantro for garnish
Sliced lemons for garnish
Instructions
Preheat the oven to 375°F (190°C).
Remove any giblets from the chicken's cavity and pat the chicken dry with paper towels.
Add the lemon wedges, and garlic bulbs to the inside of the chicken cavity.
In a small bowl, mix the salt, black pepper, paprika, ground cumin, and turmeric powder.
Brush the melted ghee all over the chicken, then rub the spice mixture evenly over the entire surface of the chicken.
Drizzle fresh lemon juice on top.
Place the seasoned whole chicken on a roasting pan or a large oven-safe skillet.
Roast in the preheated oven for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Garnish with fresh cilantro and serve the chicken hot, accompanied by your favorite side dishes.
