Ingredients

  • 1 butternut squash medium - peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste

Optional: fresh parsley, chopped, for garnish

    Instructions

    • Preheat the air fryer to 375°F (190°C) for about 5 minutes.
    • Peel the butternut squash using a sharp vegetable peeler. Cut it in half lengthwise, scoop out the seeds with a spoon, and then cut the flesh into 1-inch cubes. Make sure the cubes are relatively uniform in size for even cooking.
    • Toss the butternut squash cubes with olive oil, garlic powder, paprika, salt, and black pepper in a large mixing bowl. Ensure all the cubes are coated evenly with the seasoning.
    • Place the seasoned squash cubes in the air fryer basket in a single layer, making sure they are not overcrowded. If necessary, work in batches.
    • Air fry the butternut squash at 375°F (190°C) for 18-20 minutes, shaking the basket or tossing the squash halfway through the cooking time. Check for doneness; the squash should be fork-tender and golden brown on the edges.
    • Once the butternut squash is cooked to perfection, transfer it to a serving dish. Garnish with fresh chopped parsley if desired. Serve hot as a side dish or a healthy snack.
