Equipment

  • electric smoker

Ingredients

  • 3 pounds tri-color potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons Italian seasoning
  • Salt and pepper to taste

Instructions

  • Preheat the smoker to 225° F.
  • Add the potatoes to a large bowl and drizzle them with olive oil. Toss to coat.
  • Sprinkle the potatoes with seasoning, salt, and pepper, and toss to coat.
  • Transfer the potatoes to a smoking/grilling pan.
  • Smoke them for 2 ½ hours or until the potatoes are fork-tender.
  • Serve immediately.
  • Store any leftovers in the refrigerator.

Notes

Cooking time can be adjusted by increasing the smoker's temperature. Increase the set temperature to 250-275° to decrease your cooking time and maintain a lighter smokiness flavor. Smoker temperature above 300°F will significantly reduce the smoke flavor.
