Ingredients

  • 6 ounces Velveeta cheese - cut into cubes
  • ½ cup butter - 1 stick
  • 3 ounces unsweetened chocolate - roughly chopped
  • 16 ounces confectioner’s sugar - about 4 cups
  • 1 cup walnuts - chopped
  • 1 tsp vanilla extract

Instructions

  • Line a square 8x8 dish with parchment. Set aside.
  • Combine the cheese, butter, and chocolate in a medium microwave-safe bowl. Heat in 30-second intervals, stirring between each interval until the mixture is combined and smooth.
  • Place the confectioner’s sugar in a large mixing bowl. I found it easiest to put it in the stand mixer.
  • Add the chocolate mixture and work it into the sugar until combined. If using the stand mixer, just turn it on to the lowest setting. It should come together quite quickly.
  • Fold in the walnuts and vanilla.
  • Transfer the mixture to the prepared dish. Smooth into an even layer and add more nuts to the top if desired.
  • Cover and refrigerate until firm.
  • Once set, you can cut into squares and serve.

Notes

Keep refrigerated when not serving.
