20ouncescrushed pineappledrained well, reserve juice (1 can)
6ounceslime gelatin1 large box
2cupsboiling water
2cupslemon-lime soda7up
1cupmini marshmallows
Topping
½cupgranulated sugar
3tablespoonsall-purpose flour
1large eggslightly beaten
Pineapple juice from the reserved can
2tablespoonsunsalted butter
1cupwhipped topping or heavy whipping cream
½cupPecanschopped, optional for garnish
Instructions
Drain the pineapple and reserve the juice.
In a large bowl, combine the gelatine and the boiling water.
Stir until completely dissolved, about 2 minutes.
Add the lemon-lime soda and stir until well combined.
Stir in the drained pineapple and the marshmallows.
Pour the jello into a 13x9 pan.
Chill in the refrigerator until it is completely set.
While the jello is setting, you can prepare the topping.
Topping
In a small saucepan, combine the sugar, flour, beaten egg, and the reserved pineapple juice.
Whisk constantly over medium heat until it has thickened.
Add the butter and stir until melted.
Remove the mixture from the heat and allow it to cool for about 30 minutes.
Fold in the whipped topping until the mixture is smooth.
If you are using whipping cream instead of whipped topping, beat with a mixer at high speed until stiff peaks form, then fold it into the pudding mixture.
