Ingredients

  • 20 ounces crushed pineapple drained well, reserve juice (1 can)
  • 6 ounces lime gelatin 1 large box
  • 2 cups boiling water
  • 2 cups lemon-lime soda 7up
  • 1 cup mini marshmallows

Topping

  • ½ cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 large egg slightly beaten
  • Pineapple juice from the reserved can
  • 2 tablespoons unsalted butter
  • 1 cup whipped topping or heavy whipping cream
  • ½ cup Pecans chopped, optional for garnish

Instructions

  • Drain the pineapple and reserve the juice.
  • In a large bowl, combine the gelatine and the boiling water.
  • Stir until completely dissolved, about 2 minutes.
  • Add the lemon-lime soda and stir until well combined.
  • Stir in the drained pineapple and the marshmallows.
  • Pour the jello into a 13x9 pan.
  • Chill in the refrigerator until it is completely set.
  • While the jello is setting, you can prepare the topping.

Topping

  • In a small saucepan, combine the sugar, flour, beaten egg, and the reserved pineapple juice.
  • Whisk constantly over medium heat until it has thickened.
  • Add the butter and stir until melted.
  • Remove the mixture from the heat and allow it to cool for about 30 minutes.
  • Fold in the whipped topping until the mixture is smooth.
  • If you are using whipping cream instead of whipped topping, beat with a mixer at high speed until stiff peaks form, then fold it into the pudding mixture.
  • Spread the mixture evenly over the set jello.
  • Return to refrigerator until ready to serve.
  • Sprinkle with chopped pecans, if using.
