Ingredients

  • 1 cup butter softened
  • ¾ cup brown sugar
  • 2 cups all-purpose flour
  • 2 teaspoon vanilla
  • 1 ½ cups pecans chopped

Instructions

  • In a large mixing bowl, cream together the butter and brown sugar.
  • Add in the vanilla.
  • Slowly add the flour until well combined, and then fold in the chopped pecans.
  • Roll the dough into a log on a piece of parchment paper. Wrap the paper around the dough and chill in the refrigerator for at least 1 hour.
  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • Remove the dough from the refrigerator and slice it into ½ inch rounds.
  • Place the cookie slices on the baking sheet.
  • Bake for 15 minutes.
  • Remove from the oven and transfer to a cooling rack.

Notes

  • Store in an airtight container at room temperature for 3-5 days.
  • Chill the dough for at least one hour but up to 3 days in the refrigerator.
  • Replace one teaspoon of vanilla extract with a teaspoon of maple extract for a delicious alternative.
