Ingredients

  • 1 cup unsalted butter softened
  • cup granulated sugar
  • ½ teaspoon salt
  • 1 large egg room temperature
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups chocolate chips milk or semi-sweet
  • ¼ cup mixed nuts chopped - like walnuts and pecans

Instructions

  • Preheat the oven to 350 degrees F.
  • Line a square baking pan with parchment paper.
  • In a large bowl, beat the butter until fluffy.
  • Add sugar and salt and beat until well combined and fluffy.
  • Beat in the egg and vanilla until well combined.
  • Gradually add the flour and beat until well combined.
  • Press the cookie dough evenly into the prepared pan.
  • Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  • Cool completely on a wire rack.
  • Chop the nuts and set aside.
  • Melt the chocolate chips in a microwave-safe bowl.
  • Pour the chocolate over the cookie bars and spread it with an offset spatula.
  • Immediately add the chopped nuts.
  • Let the chocolate topping harden for 15 minutes.
  • Cut the cookies into triangles.
  • Store in an airtight container.
