Ingredients

  • 1 ½ cups heavy whipping cream very cold
  • cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 oz mascarpone cheese
  • 1 ½ cups coffee freshly brewed - strong
  • 2 tablespoons Kahlua coffee-flavored liqueur or dark rum, optional
  • 7 oz Ladyfingers

Cocoa powder for dusting

    Strawberries for serving, optional

      Fresh mint for serving, optional

        Instructions

        • Add the whipping cream to the bowl of a stand mixer.
        • Beat the cream with the whip until soft peaks form.
        • Gradually add the sugar until stiff peaks form.
        • Beat in the vanilla extract.
        • Gently fold in the mascarpone cheese.
        • In a shallow dish or bowl, add the coffee and liqueur.
        • Quickly dip each of the ladyfingers into the coffee mixture.
        • Lay them in a single layer into the square pan, you may need to cut them to fit.
        • Evenly spread half of the cream mixture over the top of the ladyfingers.
        • Add another layer of dipped ladyfingers.
        • Finish with the remaining cream mixture.
        • Place the pan in the refrigerator to chill for at least 3 hours or overnight before serving.
        • Dust with a generous layer of cocoa powder on top before serving.
