Instructions
Remove the chuck roast from the refrigerator and let it sit at room temperature for one hour prior to smoking.
Preheat the smoker to 225°F.
While the smoker is preheating, season all sides of the chuck roast with equal parts of coarse kosher salt, fresh cracked black pepper, and garlic powder to taste.
Place the chuck roast directly onto grill grates and smoke until you have an internal temperature of 165°F. (5-6 hours)
Remove it from the smoker, place it on a piece of peach butcher paper, and add ½ cup of beef broth to the top of the chuck roast.
Wrap the roast tightly with the peach paper and pour the remaining beef broth onto the paper to thoroughly soak the paper.
Place the wrapped roast back onto the smoker and cook for another 3 hours or until the internal temperature reads 190°F.
Remove the chuck roast from the smoker, wrap it in a heavy towel, and place it into a cooler to rest for one hour.
