Smoked Chuck Roast

Ingredients

  • 4 pounds chuck roast
  • Coarse kosher salt to taste
  • Fresh cracked black pepper to taste
  • Garlic powder to taste
  • 2 cups beef broth

Instructions

  • Remove the chuck roast from the refrigerator and let it sit at room temperature for one hour prior to smoking.
  • Preheat the smoker to 225°F.
  • While the smoker is preheating, season all sides of the chuck roast with equal parts of coarse kosher salt, fresh cracked black pepper, and garlic powder to taste.
  • Place the chuck roast directly onto grill grates and smoke until you have an internal temperature of 165°F. (5-6 hours)
  • Remove it from the smoker, place it on a piece of peach butcher paper, and add ½ cup of beef broth to the top of the chuck roast.
  • Wrap the roast tightly with the peach paper and pour the remaining beef broth onto the paper to thoroughly soak the paper.
  • Place the wrapped roast back onto the smoker and cook for another 3 hours or until the internal temperature reads 190°F.
  • Remove the chuck roast from the smoker, wrap it in a heavy towel, and place it into a cooler to rest for one hour.
  • Slice and serve.
