Ingredients

  • 5 pounds whole chicken
  • 2 tablespoons olive oil
  • ¼ cup light brown sugar
  • ¼ cup fine sea salt
  • 2 teaspoons paprika
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin

Optional - ½ cup favorite BBQ sauce

    Instructions

    • Remove any giblets from the chicken cavity and wipe any moisture from the skin of the chicken with a paper towel.
    • In a small bowl mix together the brown sugar, salt, paprika, black pepper, garlic powder, onion powder, and ground cumin.
    • Coat the outside and inside of the chicken with olive oil and season all sides of the chicken.
    • Using butcher twine, tie the legs together and tuck the wing tips under the bottom of the chicken.
    • Allow chicken to rest while you preheat the smoker to 250°F.
    • Place the chicken breast side up directly onto the grates of your smoker. Close the lid and smoke for 2 ½ to 3 hours. Breast temperature should be 165°F when done.
    • (Optional) Baste the chicken with your favorite BBQ sauce during the final 30 minutes of cooking.
    • When the chicken has reached the correct internal temperature, remove it from the smoker and allow it to rest for 10-15 minutes before serving.
