Ingredients

  • 6 oz stuffing mix
  • 1 ½ cups chicken broth or water
  • ¼ cup butter ½ stick unsalted
  • 10.5 oz cream of chicken soup 1 can
  • 10.5 oz cream of mushroom soup 1 can
  • ½ cup sour cream
  • 3 cups chicken cooked - rotisserie, or diced
  • 12 oz frozen mixed vegetables thawed

Instructions

  • Preheat the oven to 375 degrees F.
  • Lightly spray a 13x9 baking dish with cooking spray.
  • In a medium saucepan, bring the chicken broth and butter to a boil.
  • Stir in the stuffing mix, cover, and remove from heat.
  • Let stand for 5 minutes, and then fluff with a fork.
  • In a large bowl, whisk together the soups and sour cream.
  • Fold in the chicken and vegetables.
  • Pour the mixture into a prepared baking dish.
  • Spread the stuffing in an even layer on top.
  • Bake for 25-30 minutes or until the stuffing is browned and the mixture is bubbly.
