Ingredients
2lbsground beef - 85% lean
1cupbread crumbs - you can also use almond flour to keep it low-carb
¾cupwater - you can also use half and half or milk
2large eggs
1pktLipton onion soup mix1- envelope
¼cupketchup
2tbspbbq sauce
Glaze
½cupketchup
1tbspmustard
OR you can use a mix of burger sauce and ketchup - my personal favorite
Instructions
Preheat the oven to 350 degrees.
Coat a large loaf pan with cooking spray or oil. Set aside.
Combine the ground beef, bread crumbs, milk, eggs, soup mix, and ketchup in a large bowl.
Work the mixture together with your hands - taking care to not overwork and make the mixture pasty. You want it tender as it cooks.
Transfer the mixture to the prepared loaf pan.
Combine the glaze ingredients in a small bowl. Whisk to combine and then spread over the top of the meatloaf.
Bake for 60-80 minutes or until internal temperature reaches 165 degrees.
You can double the glaze and top with an additional fresh glaze mixture after the initial portion has baked into the meatloaf. It gives a great pop of flavor this way - but it isn’t necessary.
