Ingredients

  • 2 lbs ground beef - 85% lean
  • 1 cup bread crumbs - you can also use almond flour to keep it low-carb
  • ¾ cup water - you can also use half and half or milk
  • 2 large eggs
  • 1 pkt Lipton onion soup mix 1- envelope
  • ¼ cup ketchup
  • 2 tbsp bbq sauce

Glaze

  • ½ cup ketchup
  • 1 tbsp mustard

OR you can use a mix of burger sauce and ketchup - my personal favorite

    Instructions

    • Preheat the oven to 350 degrees.
    • Coat a large loaf pan with cooking spray or oil. Set aside.
    • Combine the ground beef, bread crumbs, milk, eggs, soup mix, and ketchup in a large bowl.
    • Work the mixture together with your hands - taking care to not overwork and make the mixture pasty. You want it tender as it cooks.
    • Transfer the mixture to the prepared loaf pan.
    • Combine the glaze ingredients in a small bowl. Whisk to combine and then spread over the top of the meatloaf.
    • Bake for 60-80 minutes or until internal temperature reaches 165 degrees.
    • You can double the glaze and top with an additional fresh glaze mixture after the initial portion has baked into the meatloaf. It gives a great pop of flavor this way - but it isn’t necessary.
    • Slice and serve.
