- ½ cup butter melted (1 stick) unsalted
- 15 ounces whole kernel corn drained (1 can)
- 15 ounces creamed corn not drained (1 can)
- 8.5 oz Jiffy Corn Muffin Mix 1 box
- 1 cup sour cream
- 2 large eggs
Preheat the oven to 350 degrees F.
Spray a square 8 x 8-inch baking dish with cooking spray.
In a small microwave-safe bowl, melt butter.
Drain the whole corn and add it to a large bowl.
Add the creamed corn, sour cream, and eggs to the bowl and mix until well combined.
Add the muffin mix and pour in the melted butter.
Stir to combine well.
Spread the mixture evenly into the prepared baking dish.
Bake for 45-50 minutes or until lightly browned.
Serve immediately.
