Ingredients

  • ½ cup butter melted (1 stick) unsalted
  • 15 ounces whole kernel corn drained (1 can)
  • 15 ounces creamed corn not drained (1 can)
  • 8.5 oz Jiffy Corn Muffin Mix 1 box
  • 1 cup sour cream
  • 2 large eggs

Instructions

  • Preheat the oven to 350 degrees F.
  • Spray a square 8 x 8-inch baking dish with cooking spray.
  • In a small microwave-safe bowl, melt butter.
  • Drain the whole corn and add it to a large bowl.
  • Add the creamed corn, sour cream, and eggs to the bowl and mix until well combined.
  • Add the muffin mix and pour in the melted butter.
  • Stir to combine well.
  • Spread the mixture evenly into the prepared baking dish.
  • Bake for 45-50 minutes or until lightly browned.
  • Serve immediately.
