Ingredients
8ouncescream cheese – room temperature
½cupbutter – room temperature
1egg
15.24ounceswhite cake mix1 box
food coloring – in purple, orange, and green
candy eyeballs
Instructions
Combine the cream cheese, butter, and egg in a large mixer bowl. Beat together until light and fluffy.
Add the cake mix and stir slowly until just combined.
Divide the batter into three bowls.
Add the food coloring to each bowl and mix until the color is uniform throughout.
Cover and chill each color of dough for 30 minutes.
Preheat the oven to 350 degrees.
Roll 2-3 tablespoon-sized portions into balls.
Place on a parchment-lined baking sheet.
Bake for 10-12 minutes.
Add the candy eyes to each of the cookies immediately after removing them from the oven before they cool – pressing them in just deep enough so they don’t fall out.
Allow to cool completely before storing in an airtight container.
