Equipment

  • electric smoker
  • wood pellets of choice

Ingredients

  • 24 oysters fresh - in the shell
  • 6 tablespoons butter unsalted
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • teaspoon black pepper fresh ground
  • hot sauce optional

Instructions

  • Preheat the smoker to 225 degrees Fahrenheit.
  • Rinse the oysters in cold clean water, shuck them, and retain ½ half of the shells.
  • Boil the shells in water for 10 minutes and then dry them.
  • Place the oysters on a grilling sheet/cooling rack. Smoke the oysters for 15-20 minutes, or until they are cooked through. (140° F)
  • Combine the butter, garlic powder, paprika, and black pepper in a small microwave-safe bowl.
  • Heat in the microwave for 30 seconds, stir and continue heating for 10 seconds until the butter is melted.
  • When the oysters are ready, add the smoked oysters to the melted butter mixture and then add the butter-dipped smoked oysters to the prepared shells for serving.
  • Serve immediately.
