Ingredients
24oysters fresh - in the shell
6tablespoonsbutterunsalted
½teaspoongarlic powder
¼teaspoonpaprika
⅛teaspoonblack pepperfresh ground
hot sauceoptional
Instructions
Preheat the smoker to 225 degrees Fahrenheit.
Rinse the oysters in cold clean water, shuck them, and retain ½ half of the shells.
Boil the shells in water for 10 minutes and then dry them.
Place the oysters on a grilling sheet/cooling rack. Smoke the oysters for 15-20 minutes, or until they are cooked through. (140° F)
Combine the butter, garlic powder, paprika, and black pepper in a small microwave-safe bowl.
Heat in the microwave for 30 seconds, stir and continue heating for 10 seconds until the butter is melted.
When the oysters are ready, add the smoked oysters to the melted butter mixture and then add the butter-dipped smoked oysters to the prepared shells for serving.
