Ingredients

Salad

  • 3 cups watermelon - seedless - cubed
  • 1 cup cucumber English - halved and sliced
  • 1 cup goat cheese crumbled
  • ½ cup red onion - halved and thinly sliced
  • ¼ cup basil - chopped - fresh leaves
  • 2 tablespoons mint - chopped fresh

Dressing

  • 3 tablespoons lime juice - freshly squeezed
  • 2 tablespoons olive oil
  • ¼ teaspoon minced garlic
  • salt and black pepper to taste

Instructions

  • In a large bowl, toss together the cubed watermelon, cucumber, goat cheese, red onion, basil, and mint.
  • In a jar or bowl, shake or whisk the lime juice, olive oil, minced garlic, salt, and pepper for the dressing.
  • Keep the two mixtures separate until ready to serve.
  • Just prior to serving, pour the dressing over the salad. Toss and serve.
