Salad
- 3 cups watermelon - seedless - cubed
- 1 cup cucumber English - halved and sliced
- 1 cup goat cheese crumbled
- ½ cup red onion - halved and thinly sliced
- ¼ cup basil - chopped - fresh leaves
- 2 tablespoons mint - chopped fresh
Dressing
- 3 tablespoons lime juice - freshly squeezed
- 2 tablespoons olive oil
- ¼ teaspoon minced garlic
- salt and black pepper to taste
In a large bowl, toss together the cubed watermelon, cucumber, goat cheese, red onion, basil, and mint.
In a jar or bowl, shake or whisk the lime juice, olive oil, minced garlic, salt, and pepper for the dressing.
Keep the two mixtures separate until ready to serve.
Just prior to serving, pour the dressing over the salad. Toss and serve.
