Shrimp Skewers in Oven

- 1 pound colossal shrimp - raw - peeled and deveined
- ¼ cup olive oil
- 2 lemons zested and juiced
- 4 tablespoons minced garlic
- 1 tablespoon honey
- salt and black pepper to taste
- 1 tablespoon parsley freshly chopped

Place the shrimp in a large mixing bowl. Set aside.
Mix the olive oil, lemon zest, lemon juice, garlic, honey, salt, and black pepper in a smaller bowl.
Pour the mixture over the shrimp and stir gently.
Cover the bowl and refrigerate for 1 hour.
When ready to cook, preheat the oven to 450 degrees.
Prepare a large rimmed baking sheet by lining it with parchment paper or aluminum foil.
Thread the shrimp onto bamboo or metal skewers. Two to three shrimp will fit on each strip. Discard the remaining marinade.
Place the shrimp skewers on the prepared baking sheet.
Bake for 4 to 6 minutes, flipping halfway and basting in the juices.
Prior to serving, brush the skewers with any remaining pan juices.
Sprinkle with parsley. Serve with fresh lemon slices.
