Ingredients

  • 15.25 ounces lemon cake mix 1 box
  • 2 eggs
  • ½ cup vegetable oil

Confectioner’s sugar - optional

    Instructions

    • In a large mixing bowl, combine the cake mix, eggs, and oil - mixing until smooth.
    • Cover and refrigerate for at least 30 minutes.
    • Preheat the oven to 350 degrees.
    • Line several baking sheets with parchment paper.
    • Form the dough into 1-inch balls.
    • Roll the dough in confectioner’s sugar - if you want crinkle-style cookies
    • Place the dough on the lined baking sheet - 2” apart.
    • Bake for 10-12 minutes.
    • Cool on the baking sheet for several minutes before transferring to a wire rack to cool completely.
