Orange Cake
- 1 cup vanilla yogurt
- 1 cup granulated sugar
- 3 eggs
- ½ cup oil
- 2 tablespoons orange juice
- 2 tablespoons orange zest
- ½ teaspoon almond extract
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
Glaze
- 1 cup confectioner’s sugar
- 1 tablespoon orange zest
- 1 tablespoon orange juice
- 1 tablespoon heavy cream
Orange Cake
Preheat the oven to 350 degrees Fahrenheit.
In a large bowl add the yogurt, sugar, eggs, oil, orange juice, orange zest, and extract. Whisk together until completely combined and smooth.
Then add the flour, baking powder, and salt. Mix everything again until just incorporated. Make sure not to overmix.
Now pour the batter into a nonstick, greased loaf pan.
Bake for 35-40 minutes or until a toothpick comes out clean.
While the cake is baking, make the glaze.
Glaze
In a mixing bowl, whisk the confectioner’s sugar and orange zest together.
Then add the orange juice and heavy cream, whisking until a thick glaze has formed.
