Ingredients

Orange Cake

  • 1 cup vanilla yogurt
  • 1 cup granulated sugar
  • 3 eggs
  • ½ cup oil
  • 2 tablespoons orange juice
  • 2 tablespoons orange zest
  • ½ teaspoon almond extract
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Glaze

  • 1 cup confectioner’s sugar
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice
  • 1 tablespoon heavy cream

Instructions

Orange Cake

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl add the yogurt, sugar, eggs, oil, orange juice, orange zest, and extract. Whisk together until completely combined and smooth.
  • Then add the flour, baking powder, and salt. Mix everything again until just incorporated. Make sure not to overmix.
  • Now pour the batter into a nonstick, greased loaf pan.
  • Bake for 35-40 minutes or until a toothpick comes out clean.
  • While the cake is baking, make the glaze.

Glaze

  • In a mixing bowl, whisk the confectioner’s sugar and orange zest together.
  • Then add the orange juice and heavy cream, whisking until a thick glaze has formed.

Decorate

  • Once the cake is out of the oven let it cool completely.
  • Remove the cake from the loaf pan and pour the glaze over the top.
