Ingredients

  • 2 lbs. beef short ribs

salt and pepper to taste

  • 1 tbsp. olive oil
  • ½ onion - sliced
  • 1 cup beef broth
  • 2 tsp minced garlic
  • ½ cup bbq sauce you can use sugar-free if you want to make this low-carb

Instructions

  • Season the short ribs with salt and pepper to taste.
  • Set the Instant Pot to saute, and add the olive oil to the pot insert.
  • Add the seasoned ribs to the pot and sear the short ribs evenly on both sides.
  • Once you have seared one side of the ribs, add the onion slices to saute them.
  • Press the off button on the Instant Pot, and add the broth and garlic.
  • Place the lid on and set to sealing.
  • Cook on manual high for 40 minutes.
  • Allow the Instant Pot to do a natural release, and then open the lid once the pin drops.
  • Remove the short ribs, and shred them with a fork.
  • Place the meat into a large bowl, and toss with the BBQ sauce before serving.
