Ingredients

  • 3 chicken breasts large boneless -skinless
  • 3 tablespoons olive oil
  • 2 teaspoons dried parsley
  • 1 teaspoon oregano leaves
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon minced garlic

      Instructions

      • Cut the chicken breasts into 2-inch pieces.
      • Combine the olive oil, parsley, oregano, onion powder, thyme, garlic, salt, and pepper in a gallon-size freezer bag and shake to combine.
      • Add the sliced chicken. Seal and toss to coat.
      • Refrigerate for at least two hours or overnight.
      • Preheat the oven to 450 degrees.
      • Place the skewers in a tray of water to soak so they are very wet when you are ready to add the chicken.
      • Prepare a large-rimmed sheet pan with parchment paper or aluminum foil spritzed with nonstick cooking spray.
      • Thread bamboo skewers through the marinated chicken. Place the skewers on the prepared baking sheet.
      • Bake the chicken kabobs for 15 minutes or until cooked through, turning once.
      • If more color is desired, you can broil the kabobs for 1 to 2 minutes or until the desired color is reached.
