2tablespoonsvegetable oildepending on size of pan (can also use canola oil)
2eggsfresh if available
Instructions
Set the eggs out on the counter and allow them to come to room temperature for about 20 minutes.
In a cast iron pan over medium-high heat, add the oil and allow it to heat.
Turn heat down to low.
Crack the eggs into the heated skillet, season with kosher salt and fresh cracked black pepper. Cook the eggs for 2-4 minutes or until the white is firm and the yolk is still runny.
Remove the eggs from the pan and serve immediately.
