Ingredients

  • ½ cup unsalted butter - room temperature
  • ½ cup granulated sugar
  • ¼ cup brown sugar - packed
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 tsp cake batter flavoring extract
  • 2 cups all-purpose flour - spooned and leveled
  • ½ tsp table salt
  • ½ tsp baking powder
  • 1 cup rainbow jimmies
  • ½ cup white chocolate chips + more for the tops
  • ½ cup rainbow nonpareil sprinkles

additional sprinkles of choice as desired

    Instructions

    • Preheat the oven to 375 degrees.
    • Combine the butter, granulated sugar, and brown sugar in a large mixing bowl. Beat well until light and fluffy.
    • Mix in the egg and both extracts.
    • Add the flour, salt, and baking powder - mixing in slowly until just incorporated. Then increase the speed for about 15-20 seconds to whip it well. Take care to not over-mix. It should not be dry looking.
    • Fold in the sprinkles and chocolate chips.
    • Use a 1/4 cup cookie scoop and portion out the dough onto a parchment-lined baking sheet. Place the dough about 2" apart - I was able to get 6 cookies on a 3/4 sheet. So you might only get 4 on a standard baking sheet.
    • Bake for about 15-16 minutes - be sure to not over-bake. They will look a bit undercooked but will set once they cool.
    • Immediately add more chocolate chips to the tops of the baked cookies when you pull them out of the oven - before they cool and set. This is optional but makes for a prettier cookie.
    • Allow the cookies to cool on the baking sheet for several minutes before transferring them to a wire rack to cool completely.
    • Store the cookies in an airtight container for several days.

    Notes

    Note - you can make slightly smaller cookies, baking them for 9-11 minutes.
