Sausage and Rice Casserole

Ingredients

  • 13.5 ounces smoked sausage cut into rounds
  • 2 cups chicken broth
  • 1 cup long grain white rice uncooked - or brown
  • 1 teaspoon garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • 2 cups broccoli florets
  • 14.5 oz diced tomatoes Italian style
  • 1 cup sharp cheddar cheese grated

Instructions

  • Preheat the oven to 375 degrees F.
  • Lightly spray a square baking dish with nonstick cooking spray. Set aside.
  • Slice the sausage and set aside.
  • Bring the chicken broth to boil in a medium saucepan.
  • Add the rice and reduce the heat to low, cover and simmer for 10 minutes.
  • Add the broccoli to the saucepan, cover and continue cooking for 5 minutes.
  • Remove from the heat and carefully transfer it to a large bowl.
  • Sprinkle with garlic powder, salt and pepper, stir to combine.
  • Mix in the undrained tomatoes and the sliced sausage.
  • Transfer the mixture into the prepared baking dish.
  • Sprinkle with cheese.
  • Cover with foil and bake for 20 minutes.
  • Remove from the oven, remove the foil.
  • Return it to the oven for 3-5 minutes or until cheese is melted and casserole is bubbly.
  • Serve with crusty bread and a salad if desired.
  • Store any leftovers in the refrigerator.
