Easy Rainbow Unicorn Cookies



Unicorn Cookies are a whimsical treat enjoyed by all ages. Deliciously sweet marbled-colored cookies are perfect for rainbow parties and summer months!


– 1½ cups granulated sugar – 1 cup unsalted butter – room temperature – 2 large eggs – 1 tsp vanilla extract – 3 cups all-purpose flour – ½ tsp baking soda – ½ tsp cream of tartar – ½ tsp table salt – 1 cup white chocolate chips + more for the tops of the cookies – ⅓ cup jimmies colorful

Suggested 4 colors of food coloring – yellow, teal, bubble-gum pink & fuchsia


Combine main cookie ingredients as you would for a standard cookie recipe. NO food coloring yet!


Place the dough into separate bowls. Add several drops of food color – one for each bowl of dough. Fold in until incorporated and the dough has achieved the shade you desire.


Shape each color of the cookie dough into a long log – approx 15” long. Place each dough next to each other on a large piece of plastic wrap. Wrap up and chill 1 hr.


Preheat oven to 350. Remove the plastic and break off portions of dough and roll it between your hands to form a ball. (about 2 tbsp in size)


Place the dough on a parchment-lined baking sheet and bake for approx 9-11 minutes. Or until the edges are set. Don’t over-bake.


Remove from the oven and top with additional white chocolate chips.
