These look soooo good. I will have to make some of these up for gifts for some of my friends who love thin mint and chocolate mint stuff. Which is like every woman I know!

Oh, Gina…I think you just created the perfect cookie! I would eat these until I made myself sick. I’m wondering if they would taste good frozen, like Thin Mints do, or if they’d get too hard?
