This is SUCH a great timesaver for nights with sports (like last night for me! Football season). I used two bags of frozen pre-grilled chicken. I also used a bag of frozen onions/pepper blend (as a timesaver). The only thing I had to “cook” was the rice. Instant pot to the rescue. Tossed it all in the slow cooker and it was ready when we all got home. Absolutely delish. Appreciate timesavers like this.

I think we tossed in 3-4 cups. But you can use whatever leftovers you have. It doesn’t need to be exact.

I completely agree! Simple recipes need to be put together in just a few minutes and with as few dishes as possible. This looks like it could easily become a family favorite. Thanks for sharing!
