Yes, you want puree or 100% pure pumpkin. They do make pumpkin pie filling in the can – that has all the sweeteners and additives in it already. You don’t want that as it will change the flavor and consistency.

These look delicious but I’m confused about pumpkin puree vs pie filling. When I google pumpkin puree canned pumpkin pops up. Is that what you’re referring to?

Great question. Because these cookies have baking powder, that essentially replaces the cream of tartar for leavening. If you want to swap those out – I think that would work just fine.
