Hi Sue, the recipe calls for quick oats because of the moisture content of the dough & the time it takes to soften this type of oat. Substituting another type of oat will not only change the consistency of the dough & therefore the baking time & how they rise & settle, but also the overall texture of the cookies once baked. I don’t recommend substituting another oat for this recipe.

I completely agree Tracy. Since I grew up in So Cal – date recipes have been part of my life. I can’t get enough of them. Hope you try this recipe- the molasses really gives them that “straight from grandma’s oven” taste.
