Hi Sue, the recipe calls for quick oats because of the moisture content of the dough &amp; the time it takes to soften this type of oat. Substituting another type of oat will not only change the consistency of the dough &amp; therefore the baking time &amp; how they rise &amp; settle, but also the overall texture of the cookies once baked. I don&#039;t recommend substituting another oat for this recipe.]]></description>
