We love this recipe!
I have made this very Beer Bread recipe for at least 45 years. Never have I ever used a mixer or dough hook. I always just mix the ingredients together with a wooden spoon. Use whatever beer you have on hand. If you’re not a beer drinker, just buy the cheapest beer you can find. It turns out great each and every time. No need to get the mixer out.

Hmmmm, I can't say for sure as I have had it work out both ways, but since the bread still rises the same, I never gave it too much attention. It could be how the flour is measured, the freshness of the ingredients, the temperature of the beer, the brand of the beer or even your elevation or temperature/humidity of your kitchen. There are so many factors.

I can tell you that what you see mixing in the bowl in the video and what goes in the pan is the same. I literally just dump the bowl into the bread pan. It is on the larger side - 9x5 vs some of my smaller ones 8.25 x 4.25 (not minis).

I made this several times and it's always been very good; however, I never get my batter to cling to the dough hook or pull away from the bowl like I've seen in the video. Also, I don't think my volume resembles the amount I see you pour into the pan. What am I doing wrong during the mixing? I've tried slower speed, medium, and higher but not the highest on my mixer.

Did you use self-rising flour?

Also, yes, the kneading/mixing is what created the gluten that helps the dough to rise. Without it the process won't create the consistency you are after. That is a huge factor in the end result.
