I would think that would work fine – but you will probably need some sort of veggie or other ingredient to hold it altogether. I have not tested it with just eggs and cheese.

I made this keto quiche and everyone loved it! It is good for a low-carb diet and you can add different ingredients to change it up. It was delicious and filling!
