They should be 1″ cubes approximately. But how did you measure the flour? Did you spoon and level or did you scoop it from a compacted bag? That can add a significant amount more in the measurement – thus making the mixing far more difficult and the batter won’t have the right consistency.

How a small did you cube the butter, because I cut mine into 1/2 inch cubes, and found it nearly impossible to get it to mix in with the flour. I tried an electric mixer, a large spoon, a potato masher, and wound up just using my fingers to work it in. The cake fell after baking, and didn’t cook all the way through, even though I used a 9 inch pan.

In reply to Karen. You may appear to be polite but, the entire comment you’ve written is laced with subtle digs. Unfortunately for you, writing in a “friendly” tone doesn’t actually mask the underlying reality of how vain and self-congratulatory your comment truly is. Boasting about your modifications to the recipe that Gina CHOSE to share is extremely dismissive and uncalled for. You could have left her recipe 3 stars and left some constructive criticism or better yet, said nothing at all.

Made thus recipe this morning into cupcakes. It made 22 cupcakes. I will use strawberry cream cheese frosting, They were very esy to make and delicious.
