Hi there Helen. I know you&#039;ll love the bread, but it definitely needs to be covered to bake. So in this case, I recommend using a baking sheet to set on top or something else that is oven-safe at that temperature and is heavy enough to trap the heat in there. Possibly another Ducth oven that can nestle in or a cast iron skillet that can rest on top. (that skillet would probably be the best option) You just don&#039;t want whatever it is to be too tall so that you&#039;d have to lower the rack in the oven. It is best to keep it around the middle for placement when making this bread. Hope you enjoy it as much as we do.]]></description>

I made two loaves this weekend-one normal, and the second one I added roasted garlic. To try something new.  I figured I’d need more flour than normal, but for some reason, I had to add well over an extra cup.  
I was then surprised that the loaf really didn’t have any garlic flavour.  (I used 3 whole bulbs of roasted garlic to one loaf)

Has anyone tried adding extras with success?  Any tips?]]></description>

Such a simple and tasty treat to enjoy with the family on a snowy morning. I started it yesterday afternoon and baked it early this morning- thanks for the idea!!
