I would allow the bars to come to room temperature before serving again. Or you could top them with a ganache (https://www.kleinworthco.com/chocolate-ganache-drip-cake/) or frosting (https://www.kleinworthco.com/chocolate-buttercream-frosting/) instead to get the consistency you are after.

Only thing was that after refrigerating overnight the chocolate separates from the peanut butter layer very easily. Anything to prevent that next time?
