Hi Robin,  We used a half of a medium sized yellow onion. You could use Vidalia if you like &#038; that would probably produce more rings since they are larger. I think I mentioned in the recipe that we had about 30 servings - but basically, it was double the rings you see in the picture - so about 40 give or take. I didn&#039;t count them &#038; we were enjoying them as we cooked so it&#039;s hard to give an exact number. As you can see in the pictures, they are all quite different in thickness &#038; size. We varied the slices from 1/2&quot; to 3/4&quot; but this really doesn&#039;t have a whole lot of impact on the final result, so I wouldn&#039;t get too meticulous about that part.
