Hi Michelle - if you look at the directions for the blueberry muffin portion of the recipe, the reserved dry mix is for tossing the berries in before adding them to the batter. This will apply to basically all mixins that tend to sink to the bottom of the batter when they aren't coated in the dry mix first. I will make a notation in the recipe to make it more clear.

I’m making these right now and trying an apricot almond variation. I couldn’t see it explained, but is the 1-2 T of reserved dry mix just not used? I read the page but didn’t see it mentioned. Maybe I just missed it? I’ll also post again if my muffins come out and put what I added! Can’t wait to try them!

Common substitutes would be olive oil, avocado oil, coconut oil, safflower oil, or grapeseed oil. But for these muffins I would probably use coconut oil.

I'm sure you can and they would bake fine. I have not personally tested it, so I can't say how their texture would be or if they would rehydrate enough through the process.

Made a double batch, which i divided, half each chocolate chips and frozen blueberries. Both have come out amazing! Slightly crunchy top, tender fluffy inside, perfect shape. My grandson did an amazing job helping, and we couldn't be more pleased with the results. Thank you. We will definitely make them again!

Perfect base muffin recipe, I added 1/3 cup oatbran, 1 tbsp orange rind and reduced the sugar by a tbsp ( all this because I wanted a somewhat higher fibre less sugar muffin). I mixed milk with 1/2 part sour milk which I believe added the moisture....the result was absolutely yum and moist. Thanks for this great recipe.
