Strawberry Coconut Pops– creamy & yet completely dairy free & contain no refined sugar. They’re a tasty, cool & refreshing frozen dessert recipe for summer that’s virtually guilt free!
Hello there my friends! Is it hot where you are? I know you are saying, “Gina, it’s summer- of course it’s hot”. But here in North Idaho it’s crazy cool right now. Like so cool I have only shed my slippers a day or two this whole summer. But that’s not stopping me from wanting a cool treat after dinner. Only thing is, I have been trying to do Weight Watchers- unofficially. So I have been working really hard to come up with treats that are low point & still make me feel like I’m getting something delicious. So with just a couple ingredients I was whipped up these super yummy strawberry coconut pops with my favorite pop maker that totally hit the spot.

Strawberry Coconut Pops
When it’s summer all I want to do is eat frozen treats. I crave nothing else but something cool & refreshing. But this whole counting points thing has been a massive reality check. I have to say it was quite shocking when one starts researching how many points are allotted for this or that. It then becomes quite obvious where the last 30 lbs came from. The mindless eating of whatever I wanted, thinking moderation would help, actually was a bit part of the problem. But I still need to feel like I’m indulging, which is where these pops come into play.
These pops are dairy free, contain no refined sugar & are just 3 simple ingredients. I was so excited when I tasted them & found that they are creamy, sweet & oh so delicious. Exactly what I need after dinner to make me feel like I’m getting dessert. But really, they are only 2 points. Not too bad & I think all this counting is helping. Sure there are times when I really want to over-do it. But if I keep those to a minimum I will be a lot better off in the long run.
