This week as you have seen, I have been in full Easter mode. It’s been really therapeutic & with the issues I have been having with the blog being down & slow & all sorts of other issues, I have been finding things to keep me busy. One of the things I have been meaning to make for a long while is Macaroons. I started with this particular recipe but really when they were all said & done- they were more like a meringue with some coconut in them. I will probably re-do them at some point using double the coconut. But you know- they still tasted quite good so I thought I would share them anyway.
I’m not all that crazy about the image but the kids ate them all before I had a chance to re-shoot. It’s just one of those things I guess. I almost didn’t post them but I sort of gave you a teaser on Sunday so I didn’t want to leave you hanging. But now I really do need to make these again just so I can retry the picture.
Ingredients
- 1 1/2 cups sweetened coconut
- 2/3 cup granulated sugar
- 2 egg whites
- 1/4 tsp vanilla extract
- dash of salt
- 1 cup chocolate chips
- 1 tbsp shortening
Instructions
- Beat egg whites, salt & vanilla in stand mixer on high until soft peaks form.
- Gradually beat in sugar, turn on high & beat until stiff & glossy.
- Fold in coconut.
- Drop in rounded spoonfuls on a greased cookie sheet.
- Bake at 325 degrees for about 20 minutes.
- Cool on cookie sheet 5 minutes- transfer to wire rack.
- Combine chocolate chips & shortening in glass bowl.
- Microwave in 30 second increments stirring in-between each cycle until chocolate is melted.
- Dip each cookie in chocolate & set upside down on wire rack.
- Sprinkle with desired decorations before chocolate hardens.
- Store in airtight container for up to 1 week.

Holy cow! I’m so hungry looking at this post! You ladies are putting me to shame with all these goodies. I really need to get back into baking. I do enjoy it, but never make the time these days. These recipes look amazing!
